A Pinteresting Meal - Hawaiian Roll Sandwiches and Zucchini Parmesan

First and foremost, before you make this recipe, I recommend you clean all the burned banana bread out of the base of your oven (you know, from the overflow the other night).  Now then, let's get started!

Hawaiian Roll Ham'n'Swiss Sandwiches - or, as I like to call them Hawamiss Sandwiches
Hawaiian Sweet Rolls
1 Whole Onion
1 Clove Garlic
3 TSP Organic Poppy Seed
3 TBL Mustard
1 TBL Worcestershire
Shaved Ham (as much as your heart desires)
7-10 Slices of Swiss Cheese

In a foil lined pan, lay out your bottom half of your Hawaiian Sweet Rolls.

Chop the garlic and onion fine, and throw in skillet over medium heat.  Next, toss in the poppy seed, mustard,  and Worcestershire.  Once the onions have softened and everything is mixed well  (and you've cleaned up the tears from crying), place 3/4 of the mixture on the roll bottoms.  Then, top the rolls with ham and cheese.  Next, place your top roll on and spread the remainder of your onion mix on top.  Cover with aluminum foil and place in 350 degree oven for 25 minutes. 





YUM!

I couldn't bring myself to serve this with just a bag of potato chips, though they would have been delicious.  Instead, we opted for...

Zucchini Parmesan Chips
2 Medium Zucchini - Thinly Sliced
I Can't Believe It's Not Butter Spray
Shredded Parmesan

Spread your sliced zucchini onto a pan.  Spray zucchini with butter.  Top with however much shredded parmesan you desire.  Bake it in the oven for about 10 minutes at 350, or until the cheese looks good and melty.

Getting Cheesy Over Brownie Bottom Cheesecake

Two posts in one night!?  We think we will.  When we decide to do something, we do it right, or at least BOLD.  I have to admit, even though we make this cheesecake fairly often, it is hard to follow the "Pink Pizza" post from earlier tonight.  However, we're gonna give it a whirl!



Here's what you need:
  • Your choice of Brownie Mix (and the ingredients it requires)
  • 4 - 8 oz Blocks of Cream Cheese (Set out about an hour before you begin baking)
  • 5 Eggs
  • 1 c of White Sugar
  • 12 oz Sour Cream
  • Table Spoon of Vanilla 
  • Either a 9x13 baking dish (or equivalent measurements) or a spring form pan
Here's what you do:

Preheat oven to 375

Start by mixing your brownie mix as directed on the box.  Pour into your buttered (or sprayed) baking dish.  Bake until it is starting to look setup, but isn't completely done.  Pull out of oven and set aside to cool.

While your brownie is baking, start on your cheesecake mix.  In your mixing bowl (or, in our case, KitchenAid Mixer), begin mixing 4 blocks (or 32 oz) of cream cheese.  Add in 5 eggs, one at a time.  You will need to stop on occasion to scrape the cream cheese off of the mixing tool.  Once the eggs are mixed completely, add in the sugar.  Once mixed, add in the sour cream, and finally the vanilla.  Allow the mixture to stir until the brownie bottom is ready to come out of the oven and has cooled a bit*.  

*The brownie bottom won't have to be completely cooled, but will need to rest for about 10-15 minutes before dumping the cheesecake mix on top.  Otherwise, the cheesecake mix will "burst" the brownie.

Next, pour the cheesecake on!  Bake in the oven for 30-45 minutes, or until the cheesecake rises above the dish and appears to be dry around the edges.

Eat hot, cool it to room temperature, throw it in the fridge...we don't care how you do it, but EAT IT!  :)  Enjoy!

DIY "The Pink Stuff" Pizza ...and other things

So, for a while now, we've been getting together once a week and it never fails that on our girl's nights, we do a diy craft or recipe.  After a month (or year) of posting photos of our creations on Facebook, we felt it may be time to share them on a blog.  Soooo, starting NOW, we present to you DIY GIRL'S NIGHT IN!  (commence applause...yes, we're dorks)

Tonight, we had planned to make pizza and cheesecake.  Casey was to bring the fixings for the pizza, as she found an amazingly ...PINK... sauce to use.  We  could go on and on about how delicious and PINK the pizza was, but instead, we'll just give you pictures to drool over and then the recipe to OUR creation!

Okay, so as with any of our creations, we weren't completely prepared!  Ha.  However, we did have the toppings, and let's get real...you can make a dough out of anything.  SO, luck would have it, I had a can of crescent rolls.  Here's what ya need...

  • "The Pink Stuff" by Pizza Shoppe
  • Bacon (about 3 strips)
  • Chicken (3 small tenders)
  • A can of crescent rolls
  • Basil (about 6-10 leaves)
  • Baby Spinach (as much as desired, we used 2 good handfuls)
  • 1 Whole Tomato
  • A bag of KRAFT Shredded Mozzarella Cheese 
  • A shake and a sprinkle of Shredded Parmesan Cheese 
And, here's what ya do...

Preheat oven to 350.

Open your can of crescent rolls and spread out the dough.  Spoon out and spread your "Pink Stuff" on the dough.  Fry your bacon until crisp, then set to the side on a napkin to degrease a bit.  Next, fry your chicken tenders in the bacon grease (look, we never said this was healthy!).  After your chicken is cooked through, shred it and place on top of the pizza sauce.  Next, pinch off your basil or grab it out of your store bought container, chop it up real fine.  Grab ya a big handful or two of baby spinach leaves and throw them in the skillet on med-low, along with your basil.  Once it is wilted, spread it evenly on your pizza dough.  At this point, your bacon should be cooled enough to crumble on top, as well.  Top it all with Mozzarella and Parmesan cheeses (I have a feeling goat cheese or feta would be yum-o, too).  Okay, slice up your tomato real pretty and throw it in the bacon grease!  Seriously.  Once the tomato has softened a bit, throw it up on top of the cheese.  Bake it in your oven at 350 for about 20 minutes, or until the crust is golden brown and the cheese begins to bubble.

Now, commence drooling...

Okay, don't panic because it looks like pepto.  Here's the crescent rolls, smothered in "Pink Stuff", and topped with chicken

Yeah, we're pretty amazing... and so is the pizza.  It's pretty much the best either of us have EVER had.  And, that's saying a lot, because we really like to eat.
